The Hawk has landed in Marin County with much ballyhoo and rejoicing! I’m currently in Novato, California taking in the uncharacteristically soggy vistas, winding hikes through the mountainside trails and watching the 49ers succumb to the same playoff fates as my Bears. Last night I was fortunate enough to provide two pies to my left coast family and I am happy to report there were nothing but clean plates and happy bellies.

While some slight modifications to the recipe were needed with the ingredients available at the local Safeway, the final product was of a high caliber. I used a different type of European butter and Typo “00” flour but the buttercrust still stole the show. It was extremely rewarding and validating to get the positive feedback from Tom, Sarah, Ian, Jackie and Carol (I will need a return trip for Nathan who is currently in exams at University of Nevada, Reno).

During my sojourn this weekend, I will be putting the final edits on my VDACS application and forwarding it along for consideration next week. I hope to conduct my first largescale bake with the spiral mixer in January and will be beta-testing order processing through my website for distribution (free pizza!).
