I Got Prospects! I’m Bona Fide!

Recently I passed my ServSafe Manager Certification and will be submitting my application to the Virginia Department of Agriculture and Consumer Services this month to become licensed to prepare and sell packaged foods in Virginia. I’ve also arranged for Santa to stow away the 44kg Fiero Forni spiral mixer in his sleigh which is very much appreciated as it weighs 249 pounds. Very soon I will formally apply to the Bread & Roses commissary kitchen and to the IX Park farmers market. Barring any major setbacks, I should be ready for a soft opening by February (read: free pizza – stay tuned).

I’ve nabbed the URL hawkcitypizza.com and I’m currently playing with different food ordering widgets to determine the best path forward. Initially, my aim is to have 70%-80% of my point-of-sale interactions off the website with 20%-30% available for walk-up purchase. The offerings will be a standard selection of six possible options available for order which will aid production during the primary phase of the rollout, this will hopefully expand to include more combinations and even DIY topping pies.

What comes next? Determining my ingredient suppliers, creating a HACCP, writing labels, locking in a POS system, registering my business, and finalizing a package design. There is no rest for the paterfamilias of Hawk City Pizza, after all, I am a man of constant pizzaiolo.
